OVEN BAKED ONION RINGS

HAPPY SUPERBOWL PARTY

canola oil spray
4 cups potato chips
1/2 tsp. cayenne pepper 1 cup buttermilk
1 cup buttermilk
1/2 cup plus 2 tbls. all-purpose flour
1/2 teasp. salt
1/4 tsp. black pepper
2 large vadalia onions (peeled)

Preheat oven to 450 degs. Coat a baking sheet with cooking spray. (set aside)
place chips in a food processor ( I use a zip log bag and a rolling pin) process into fine crumbs
In a large bowl mix cayenne pepper and chips. (set aside)
in another bowl place the buttermilk 2 tbl. flour salt pepper (set aside)
slice onions not too thin 1/4 to 1/2 inch thick seperate the rings
put 1/2 cup of flour into plastic bag add onions seal and shake
You should have already mixed the buttermilk bowl and blended the chips w/cayenne pepper in their seperate bowls
one at a time dip onion rings in buttermilk then into chips coating the rings place on baking sheet
coat the top of rings w/cooking spray bake until crisp about 20-minutes season with salt and serve
